We will explain why:\nDuring baking, the temperature of the dough can vary, which should be avoided. When placed in the mixer, the rotational speed of the equipment can cause the dough to be heated, a situation that could cause the breakdown of the gluten, resulting in undesirable characteristics in the product, such as the lack of bread rise.
